I was lucky enough to meet this week’s interviewee, Jen Blanchard, at this year’s MasterLab sessions at the Friends for Life diabetes conference in Orlando. We both won scholarships to attend Masterlab through the Diabetes Hands Foundation, and we were paired up as roommates which was a lucky break for me since Jen is so much fun, not to mention a kind and considerate roommate 🙂 She is an inspirational person with type 2 diabetes for many reasons, among them being that she doesn’t take any medication, she only uses diet and exercise to keep her blood sugars in range!
Jen was diagnosed with gestational diabetes during her last pregnancy in 2010, and her blood sugar levels immediately returned to normal after giving birth to her son. However, a few years later in 2013, she was diagnosed with type 2 diabetes. Since Jen had experience with gestational diabetes, she knew a lot about what needed to be done and she immediately stopped driving her car, bought a bicycle, and started walking/riding everywhere. She shares how she was able to gradually change her nutritional lifestyle to a higher protein and fat/low carb diet and how she learned to love cooking.
